UPDATE: Time for musical restaurants ... Gregory's Bistro in downtown Plano will close after New Year's Eve and move to the old Cafe Málaga location in McKinney (111 W. Virginia St., 75069), aiming for a Feb. 1 opening.

Gregory's Restaurant reopened as Gregory's Bistro in April 2009. Chef and owner Gregory Moreaux says it has "same great quality food and lower prices." Also, the restaurant will be BYOB.

If I had to boil hospitality down to its essence, it would be this: the ability to put diners at ease. It can be achieved in a roadside diner or a white-tablecloth restaurant. You can train people to refill water glasses, answer questions and replace silverware. But putting people at ease is like connecting with an audience: Some people can do it intuitively.
