Although it can be uneven, there’s much to recommend family-run Cavalli: certified authentic Neapolitan pizza, an all-Italian wine list, small plates instead of entrees that include wonderful grilled-eggplant-and-smoked-mozzarella stacks and house-made ricotta crostini, as well as house-made cannoli and zeppole. Casual, trattoria setting. Full bar.

In Naples, arguably the pizza capital of the world, pizzaioli, or pizza makers, are so proud of their pizza that they organized the Associazione Verace Pizza Napoletana in the mid-1980s to defend it against defilement in the form of cheaper ingredients or shortcuts. Taking attacks on foodways very seriously, the Italian government declared a denomination of control (DOC) in the late 1990s, giving the VPN the power to set standards and issue an official seal of authenticity.
