For see-and-be-seen glamour, you can't beat Al Biernat's. The 12-year-old steakhouse changed its steak supplier two months ago; instead of Allen Bros., chef Michael Weinstein now gets his prime beef from Halperns' in Atlanta. The one exception is a 16-ounce sustainably and humanely raised Niman Ranch New York strip he's been offering as a verbal special; he sends that one to Halperns' for dry aging for four weeks. Irrepressible owner Al Biernat honed his hospitality skills at Dallas' Palm steakhouse more than a decade ago, and regulars at his restaurant on the edge of Highland Park are legion. The prime, bone-in, dry-aged New York strip from respected Chicago meat purveyor Allen Bros. is as good a strip as you'll find in steak-crazed Dallas. (Full review)
Part of providing great service is knowing the menu. That might not seem so important at a steakhouse, but when you're paying upward of $50 for an a la carte steak, you want to know what you're getting. The management at Al Biernat's makes sure the servers really know the steaks. (Full review)
