With a stellar selection of the best North Atlantic oysters of the moment (there are usually 10 or 12 on offer), Oceanaire is Dallas’ most glorious raw bar. Since I reviewed the restaurant last November, chef Aaron Valimont’s cooking has really taken off. He excels at simple dishes: perfectly grilled wild Alaskan halibut “T-bone” that tasted just pulled out of the water, served simply with roasted lemon, or a more involved Costa Rican mahi-mahi “dynamite” — topped with crab and set off by a chile-spiked butter sauce. Not so simple — but fabulous — is a new appetizer, deep-fried “bon bons” with a bourbon-maple finish; they’re filled with melted foie gras. (Yes, I know foie gras is not seafood, but this dish rocks.) Here’s the thing: Valimont left the restaurant earlier this week; he’s going to head up the kitchen at a new Capital Grille to open in Plano.
